Fall screams easy, tasty and fast meals to cook for dinner so you can move on to laundry and homework. Try these pork chops for dinner.

EASY, TASTY AND FAST PORK CHOPS

4 pork chops, five pieces of bacon cut in half inch or so pieces, 1/2 small to medium onion chopped, 2 cups fresh baby spinach, 2 Tbs cornstarch, olive oil and 1 tsp of unsalted butter plus s/p

Put the pork chops in a sealed baggie with the cornstarch and s/p set aside. Cook the bacon half way then add in the onion, when bacon is crispy, but not blt crisp. Remove the bacon and onion from the pan and drain on a paper towel. Add the pork chops to the bacon grease, if you used a fatty bacon and there is a lot of grease, drain some first. Cook the pork chops of 1/2 inch thickness or so about five minutes on each side, you know that they are done when their internal temp is 145 degrees. Add the butter along with the bacon and spinach, stir a few times and once the spinach begins to wilt, not turn dark brown and mushy, just wilted while remaining a bright-ish green.

Plate the pork chops and top with the spinach and bacon. You can serve this with your favorite veggies and a small salad for a minimal carb dish or make some mashed potatoes, scalloped potatoes would be yummy with this too, and you can make those out of a box, no need to overdo it in the kitchen on a school night.
