Recipe Rescue: Countdown to Thanksgiving, Roasted Sweet Potatoes
I will be the first to tell you, I am not a fan of sweet potato casserole, it’s a lot of work combined with all of the other kitchen prep and its just too sweet. I know, you probably love sweet potato casserole, but try this out, I bet you like my roasted sweet potatoes, for no other reason than they pretty much make themselves.
WHAT YOU’LL NEED:
4 sweet potatoes, olive oil, kosher salt, 1/2 stick of butter and 1/4 cup of brown sugar
PUTTING IT ALL TOGETHER:
Peel and chop the sweet potatoes into 1″ pieces, place on a baking sheet. Drizzle with olive oil, just enough to lightly coat and sprinkle with salt. Cook at 400 degrees until fork tender, about 30-45 minutes. Put them into a serving bowl and toss with the butter and sprinkle with the brown sugar (add a little sugar, toss, add more brown sugar, toss etc…)
