Recipe Rescue: Corn Muffin Cups with BBQ Pork
These little bites are quick and easy to make and are a crowd pleaser for sure. If you have a slow cooker and a grocery store, you got this!
WHAT YOU’LL NEED:
1 Small pork roast, s/p, your favorite bbq sauce, coleslaw, 1 pkg Jiffy corn muffins (or your favorite brand)
PUTTING IT ALL TOGETHER:
Cook the pork roast overnight or while you are at work in the slow cooker on low for 8-12 hours. When it is complete shred it with a fork and add your favorite bbq sauce. Cook corn muffins according to pkg directions, when you pull them from the oven while they are still warm make a hole in the center of them, you can use your thumb, the handle end of a pestle or anything with a round bottom. Let them cool slightly and place a small amount of coleslaw in the center, top with the bbq pork and for added zing top with a dill pickle chip. YUMMY!
