If you want to avoid the restaurant crowds, but want a little more than frozen pizza on Valentines Day, this Chicken Wellington recipe is a pretty simple one.

WHAT YOU'LL NEED:

2 Boneless Chicken Breast cut in half, 10 oz frozen spinach(thawed), 1 softened 8 oz package of cream cheese, butter, half a bunch of green onions (chopped both green and white parts) and a package of Puff Pastry (in the freezer aisle)

PUTTING IT ALL TOGETHER:

***Don't forget to take your puff pastry out of the freezer and unwrap on piece (inside the packaging you'll find two rectangular pieces, you'll only need one.

Cook the chicken in butter till its browned on both side, make sure the pan is hot, you'll likely cook the chicken for about 3 minutes on each side. Remove the chicken from the pan and reduce the heat to medium low. Add the spinach to the skillet cook for about a minute, add the softened cream cheese (cut it into pieces, don't put the whole block in) stir together until well blended turn off the heat and add the green onions, mixing thoroughly.  Once everything has cooled down a bit, it's time to assemble them. Roll the puff pastry out 1-2 inches (just a couple passes withe a rolling pin up and down and sideways) cut into four pieces. On each piece of pastry add a good portion of the spinach mixture and top with a chicken breast, pull the pastry up on all four corners and create a seam. Lay each pastry 'pocket' onto a greased or parchment paper lined baking sheet seam side down. Cook until golden brown (you can brush each of them with and egg wash (one whole egg and a Tbs of water-this helps in uniform browning) Cook time should be around 15 minutes at 350-375 degrees.
