You want to cook during the week, but when the schedule is a choir performance followed by a wrestling match followed by volunteering at the food bank, time is more precious than ever. So strap on the apron for about half an hour and get moving.

4 medium potatoes (sliced thinly), 1 can of cheddar cheese soup, 1/2 cup of milk, 1/2 cup of sour cream, 1 cup shredded cheddar cheese, 3 green onions and butter plus salt and pepper


Grease a baking dish and layer the thinly sliced potatoes with a couple pats of butter and a sprinkle of green onions with salt and pepper. End with potatoes on top pour the cheddar cheese soup-milk-sour cream mixture (that you combined and warmed in the microwave for about a minute) over the potatoes and top with the shredded cheddar cheese. Bake at 350 for 30 minutes or until it bubbles and the cheese starts to brown
