Recipe Rescue: Carrie Underwood is a Vegetarian, Let’s Stir-Fry Something! [VIDEO]
In between protein shakes and veggie burgers Carrie Underwood loves stir-fry, with Tofu. I don’t know about you, but I am not a huge fan of Tofu so let’s see if we can dish up something Carrie would like without it.

WHAT YOU’LL NEED:
Oil for frying, 1 each yellow and green pepper (sliced thin), 1 cup yellow squash (cut in half), 1 cup of broccoli florets, 1 tsp of minced garlic, 1/2 cup of Teriyaki sauce, 1/2 cup of snow peas, 2 cups of bok choy (sliced), 1 cup bean sprouts, 1/2 cup snow peas and sesame oil
PUTTING IT ALL TOGETHER:
Make sure all veggies are ready as this will go quickly. Heat the oil and start by adding the peppers, cook for two minutes and add the squash, broccoli, minced garlic and Teriyaki, cook another 2-3 minutes and add the bok choy and the sprouts cook another 2-3 minutes and remove from heat, now add the snow peas and sesame oil. Serve with brown rice.
-there are many ways to do a stir-fry, you can change up the veggies, add one or two, take one or two out, add Tofu if you like it or any other protein. Stir-fry’s are simple and fast and interchangeable so have fun.
