WHAT YOU'LL NEED:

For the Apples:

6 baking apples (cored and 'meat' removed), lemon juice, 1 tsp cinnamon, 1/2 tsp nutmeg, 1 tsp brown sugar and 1/'2 cup of pecans pieces

For the Caramel Sauce:

1 cup sugar, 6 Tbs burbon, 1 stick unsalted butter and 1/2 half cup of cream

PUTTING IT ALL TOGETHER:

Core out the apples (throw away the seeds), scrape out the inside of the apple until you have a "shell", cut the 'meat' of the apple into bits and put in a bowl. Wipe the inside of the apples down with some lemon juice. Add to the bowl of apple pieces the cinnamon, nutmeg, brown sugar, pecans and a TBS of butter (not from the stick for the sauce). Place apples in a baking dish or a large muffin tin and cook in a preheated 375 oven till tender, at least 35 minutes.

For the sauce, in a medium sauce pan melt the stick of butter and medium low and add the sugar... cook until the butter and sugar are creamy and you no longer see granules in the sugar, it should be smooth. (about 5 mimutes) then add the burbon, cook for one minute and then add the cream, stir till well blended (about a minute) and remove from heat. (put a lid on the pan to keep it warm, you can always reheat it on low if needed)

Once the apples are cooked through, let cool on counter for a few minutes and serve with the caramel bourbon sauce drizzled on top. Enjoy!
