Recipe Rescue: Bacon Cheeseburger Casserole
Is it time to eat yet? That’s what I say to this dish, let’s get cooking!
WHAT YOU’LL NEED:
1 lb of 80/20 hamburger, 3 russet potatoes (peeled and sliced) 1 can cheddar cheese soup 1 can of tomato soup, half a pound of cooked bacon (crispy), 1 small onion diced (optional), s/p to taste and 8oz shredded cheddar cheese
PUTTING IT ALL TOGETHER:
Brown hamburger with onion, add tomato soup and stir till its all mixed together. Layer your potatoes in the bottom of a baking dish that you have treated with cooking spray, salt and pepper them, crumble the bacon on top of the potatoes and pour the meat mixture over the bacon, top cheddar cheese soup (I like to warm the soup in the microwave so it covers the meat nicely) bake in a 350 degree oven for about 45 minutes, top with shredded cheddar cheese and cook for another 15 minutes. Let it cool on the counter for around 5 to 10 minutes before serving. Enjoy!
