New Sushi Restaurant Coming to Fort Collins’ Campus West

Five years ago, if you'd told me I would absolutely love sushi someday, I would have said you were crazy.  And yet (thanks to my wife), here I am, super-excited that a new sushi place is coming to the town where I live!

Jaws sushi is under construction now, and workers were renovating the space late into Monday night. The restaurant is just west of Shields on Elizabeth, in the space formerly occupied by Toro Mexican Grill.

It's an exciting time to be a foodie in Fort Collins, to be sure!

The Coloradoan says Jaws will be opening "shortly," so I'll have to keep my eye out for a "OPEN" sign!
