Drippin’ Roasted Chicken [RECIPE]
Love roasting chicken, tastes so good and usually is moist and tender. Jump in the kitchen and start your ovens, this is gonna be tasty!
what you’ll need:
Pre-Heat oven to 425
1 whole roasting chicken (about 5llbs), 4-6 russet potatoes (cubed), 2 whole lemons (cut in half), season all, pepper and garlic powder and room temperature unsalted butter.
Putting it all together:
Thoroughly wash the chicken, inside and out and stuff with the lemons. Spray or grease the bottom of a roasting pan or 9×11 baking dish. Toss potatoes with salt and pepper with a little olive oil or whatever you have on hand (vegetable or canola) and put on bottom of pan. Rub chicken with butter till it is well coated, sprinkle with season all, pepper and garlic powder. Set chicken a top the potatoes and roast for 1.5 hours or until juices run clear. Remember to let the chicken ‘rest’ for up to 20 minutes so that the juices reincorporate into the chicken and don’t end up on your cutting board. Mix the potatoes well with the drippings and serve aside the chicken with a green salad.
