Charley’s Quest For The Perfect Cheese Enchilada Begins Tonight

I like a lot of things in life but there is nothing better than a good Cheese Enchilada when it comes right down to the nuts and bolts of what entices my pallet.  So, I am again on a quest for the gooiest, yummiest Cheese Enchilada in Northern Colorado.

There are at least a half dozen great places I know of personally that will never let me down when it comes to Cheese Enchiladas; two in particular.  But that never stops me from seeking out the Cheese Enchilada that is above and beyond the others.

Or have I found it already?  I won't know till I try another dozen places and sample their take on the traditional Cheese Enchilada.
